Tasting :
On the palate, it is lively and fresh, characterized by a slight residual sugar which, combined with a good structure, makes it pleasant, balanced and delicately dry.
Wine Pairing :
Serve at around 8-10°C as an aperitif, with vegetable hors d’oeuvres or to accompany delicate fish starters or white meat dishes.

- Fermentation : Crushing, destemming, pressing, cold settling and addition of cultured yeast. Controlled cold fermentation at 14°C for 10 days.
- Maturation: Fermentation is followed by racking, light clarification to stabilize proteins, and subsequent filtration. Bottling is carried out after the second fermentation in pressurized steel tanks (autoclaves), where the internal pressure rises for a month to around 5 ATM, until fermentation is complete.
