Wine Pairing :

Ideal companion for most dishes. This pleasant, fruity variety goes well with a wide range of dishes, including barbecued beef ribs, slow-roasted brisket, hamburgers, roast duck and pizzas.

  • Variety: Zinfandel 90% │Petite Sirah 10%
  • Yield of vines: 8 ton/ha
  • Type of soil: Sandy loam. Zinfandel is mainly grown in the Mokelumne River sub-AVA in Lodi.
  • Irrigation: Drip irrigation
  • Harvesting: Machine and manual
  • Fermentation: In stainless steel vats for 6 days. 5 days on skins.
  • Maturation: Aged in new French and American oak barrels for 5 months. A minimum of sulphites has been added. Malolactic fermentation. On light lees, brut racking before oak aging. Kept in bottle for 3 to 4 months before release.
  • Type of yeast: Saccharomyces Cerevisiae

  • Type of filtration : Sterile filtration before bottling.
