The elaboration process of dealcoholized wine begins in the vineyard, using different viticultural treatments to obtain grapes with a low probable alcohol content and choosing the right moment to harvest. Subsequently, these grapes are subjected to vinification to obtain a wine with high aromaticity and low alcohol content. By means of an innovative method carried out at the Win Sin Alcohol Winery, located in Valbuena de Duero (Valladolid), the aromas and alcohol are separated from the rest of the wine’s components. This is a process that minimizes the risk of loss of aromatic components in the wine and extracts the aromas and alcohol. In this way, the alcohol-free wine retains all the health promoting properties of the original wine, containing polyphenols, anthocyanins, and antioxidants.
