Tasting :

A complex, seductive nose of wild thyme, red fruits and a blend of spicy blackberry and plum aromas. This gives way to a sumptuous, fully textured palate offering generous quantities of flavour built on an elegant, fresh and feminine structure of great strain and elegance.

Excellent with duck, goose and game birds.

Winemaking :

  • Variety : 100% Alexandra Pinot Noir
  • Age of vines : 21 years old
  • Type of soil: Rough schist gravel
  • Yield of the vine: 1.45 kg / vine
  • Irrigation: Drip irrigation when necessary
  • Harvest : Harvested, selected and sorted by hand
  • Fermentation : Fermentation 60% in a wooden vat and 40% in a stainless steel vat. 8 days fermentation at 8°C, followed by 9 days fermentation at 33°C for a further 8 days. Post-fermentation at 22-30°C for 25 days. Malolactic fermentation. On lees for 11 months.
  • Maturation : Transferred to medium and light French oak barrels for 11 months of maturation. 12% new oak and the remainder in second and third-fill barrels. Aged in a bottle for 24 months.
  • Tpe of yeast : Indigenous
  • Filtation : Coarse filtration for clarification.
  • Type of fining: Egg white @ 1/20th of an organic egg white per barrel
  • Cellar: 12 years
