Tasting :
A fine, rich, and powerful wine with a lingering finish full of fruit and herbal aromas (blackcurrant leaves, white flowers, citrus). It should be served at a temperature between 10 and 12 degrees.
Wine Pairing :
Perfect as an aperitif, it pairs well with appetizers, seafood, and fish. It goes especially well with goat cheese, pikeperch, and pike in a beurre blanc sauce.
Winemaking :
The must is extracted slowly and gently (using a pneumatic press). The juice is then transferred to temperature-controlled tanks to constantly monitor and control fermentation at a low temperature (14 to 16 degrees). This very long and gentle fermentation process preserves the maximum amount of aromas.
Aged on fine lees, each cuvée is meticulously blended to ensure excellent quality and consistency across the entire production.
