Tasting :
Ruby red, deep color. The nose presents aromas of black cherry, tobacco, vanilla and eucalyptus. Supple tannins, generous body, balanced with fruity freshness.
Wine Pairing :
Red meats, game, salami, mature cheeses.
This refosco is unique in its style, as we are the only organic winery in Friuli to produce it with an "appassimento" or partial natural drying of the grapes.
Winemaking :
- Variety : Refosco dal Peducolo Rosso 100%.
- Type of soil: Morainic slopes - Eocene hills
- Age of vines: 25 years
- Yield of vines: 3t./ha
- Irrigation : Drip irrigation
- Harvest : Manual │ 30% of the grapes are naturally dried on the stems (appassimento).
- Fermentation : Fermentation in concrete vats on the skins for 16 days. Malolactic fermentation.
- Maturation : 50% new French barrels, 50% used 2-year-old French barrels. Aged in barrels with fine lees. Aged 3 months in bottle before release.
