Château de Respide, a historic Graves appellation property founded in 1630, covers 85 hectares of gravelly soil as well as 20 hectares of woodland. The Graves appellation spontaneously evokes its terroir, underlining its major role in the quality of its wines. Indeed, it’s the only appellation in France to bear the name of its very special soil: las Gravas de Bordeu, literally the Graves of Bordeaux, the alluvium carried by the Garonne and deposited on its banks millions of years ago.
In 2021, Amélie and Pierre-Edouard Chatin, passionate about vines and wine, acquired the property. Their aim is to perpetuate the know-how of past generations of winegrowers and to pay tribute to their ethical and sustainable vision of wine growing. They advocate a minimalist oenology, limiting the use of inputs and, more generally, the impact of man on wine. This vision of oenology is not synonymous with "non-interventionism"; on the contrary, it demands a great deal of rigour, fine analysis and knowledge of the living world.
In the cellar, the interventions are decided according to the objective of revealing what the terroir has given birth to, so they try to guide the wine towards the most sincere expression of the terroir combined with the vintage.
Respide wines reveal great purity and freshness, with lovely, crisp fruit. The finish, saline for the whites and slightly tobacco for the reds enhances a straightforward, racy palate.
