Tasting :
Crisp peach colour. The nose is complex with candied fruit, floral and citrus notes, a hint of minerality, and smoothness. The palate is full-bodied and rich, very lively with lemon and good length, and lovely bitterness on the finish; a slight hint of salinity. A superb wine.
Wine Pairing :
Delicious with Provençal and Mediterranean dishes, spicy dishes, red meat, and even desserts. Bouillabaisse, squid, escabèche, royal couscous, veal with olives.
