Vincent Legou took over the estate from his parents in 2008 after working for eight years at Domaine de la Romanée-Conti. From the beginning, Vincent chose to cultivate his vines in Organic Agriculture (AB). In 2014, all the vines of the Domaine are certified AB by Ecocert.

To constantly optimize the quality of the vintages, several steps are necessary, and above all, the vineyard must be given special attention. Vincent readily insists on the importance of rigorous pruning, de-budding and leaf removal to obtain healthy grapes at perfect maturity. The estate does not use any chemical products for the treatment of its vines. Herbicides are not used and the soil is worked to control the growth of undesirable weeds in the parcels.

The harvest is done manually with strict sorting to keep only the ripe and healthy grapes. The vinification is also rigorous in order to avoid the use of too many inputs. A cold maceration is first carried out before the alcoholic fermentation and only indigenous yeasts are used. Vatting lasts 4-6 weeks, followed by 12-14 months in French oak barrels, with 30% new barrels.

Today, 11.5 hectares of vines are cultivated on the Côte de Nuits and Côte de Beaune, in the Burgundy, Burgundy Aligoté, Burgundy Hautes Côtes de Nuits, Beaune, Beaune 1er Cru, Ladoix, Vosne-Romanée and Gevrey-Chambertin appellations.
All the wines are vinified, aged and bottled at the Domaine, in Nuit-Saint-Georges.
