Initial sweet, warm fragrance of wild mustard flower and vanilla;
maturity reveals stronger scents such as mint, sage, thyme and certain resins.
Dry but rounded, mellow, complex and persistent.

Appetizer: Bruchetta, Pecorino and fresh mozzarella. Fish, clams, oysters, seafood. With or without sauce.
